it usually helps to start with smooth rubber on both sides,
No it does not.
In my first 10 years in the sport , this is how I was brainwashed by the ITTF and itis coaches & the robotNazis who control the ITTF
For the next 40 years as started to become more of a coach , even though I myself switched to All Spins Diversity Table Tennis & the smart blades and smart rackets , I still used to think like you. That all newbies especially children should start with dumbest of dumb rackets made with dumb blades.
The Indian girls & women set me straight only a few years ago.
While I also simultaneously discovered why dumb rackets are so wrong to most TT players from a viewpoint of anatomy, physiology etc > Only 10&% of humans have equal backhand and forehand in all racket sports. In table tennis this difference is more pronounced.
But ITTF & its coaches brainwash rest of the 90% players for the convenience of 10% players with equal forehand and backhand
Also note that when I say equal backhand & forehand I am referring mostly to the ability play powerful consistent top spins (loops) as in ITTF's version of Top Spin only Olympic Table tennis.
That does not mean the 90% players cannot succeed with other playing style on the backhand such as a blocker or a chopper (or just as a forehand wide pips hitter). But ITTF does not want these nuisance styles to thrive , while they sing the diversity song beautifully while making 14 rule & regulation changes since to brutally abuse pips players

making spin central to the learning process from the beginning.
You of course mean Top Spin as in the world of ITTF's Top Spin only Olympic table tennis :)
This is a classic sign & indication of your extreme brainwashing by the ITTF
